The Certified Food Manager (CFM) Course covers topics on (1) Food Service and Nutrition, (2) Safety in Food Service, and (3) Food Service Management. Food Service and Nutrition covers everything from nutrients and allergens to kitchen equipment and measurements and conversions. Safety in Food Service discusses cross contamination to HACCP principles and storage guidelines to workplace safety. Food Service Management reviews income and costs to menu design and calculating projected sales to human resources management principles. This course has a colorful downloadable study manual and posters, as well as electronic flash cards to assist you in your preparation for taking the International Food Service Executives Association (IFSEA) CFM Exam, a nationally recognized certification which is included in this package. In order to meet or exceed federal standards, CFM needs to be renewed every 3 years.
